Raw milk does not go through the pasteurization and other "sanitizing" processes of regular and organic milks that you may purchase. Because the milk is not homogenized, you'll find a creamier, more flavorful product. Also, many who have allergies, lactose intolerance and other sensitivities to typical dairy products are often able to consume raw milk with no problems due to high nutritional value and natural, healthy bacteria found in raw milk.

Because raw milk is not processed through the standards required by the federal and state gorvernments, you cannot purchase raw milk in stores. In Colorado, you may only buy raw milk by being a member of a co-op and purchasing shares of an animal. In other words, a producer raises and cares for the animal of which you purchase, giving you ownership in part of the animal, and in return, you receive a regular supply of milk from that animal.
